Fermentación de cacao húmedo en cajas de grandes dimensiones

Abstract
The investigation was carried out in the Benefit Center of the Agro-Forest Enterprise and Coco Baracoa, Guantánamo province with the purpose of evaluating the fermentation process of the humid cocoa in wooden boxes of cedar with capacity of 6900 kg and 9200 kg of cocoa pulp. The experimental variants were: boxes of 12.0 m x 0.8 m x 2.50 m (9200 kg of cocoa pulp (A)); boxes of 1.20 m x 0.75 m x 0.50 m (276 kg of cocoa pulp (B witness)) and boxes of 12,0 m x 0.6 m x 2.0 m (6900 kg of cocoa pulp (C)). The boxes of big dimensions (A, C) that were built under a house of covered cultivation of vegetables on a wooden platform. The process of fermentation was carried out during 6 days. The turns it was made every 24 hours for the small boxes and 48 hours for the big ones. The temperature of the mass was measured daily. The fermented cocoa dried off in cement yard during 6 days until reaching between 6 % and 8 % of humidity and they were determined: proves of court; percentage of humidity, weight of 100 grains, head percentage and index of fermentation. 8 repetitions were made in the time. Analyses of proportions for the results of the court test were carried out. Can be employees for the fermentation of the cocoa pulp cedar boxes with dimensions of 12.0 m x 0.8 m x 2.50 m or 12.0 m x 0.6 m x 2.0 m.
